  • 200 g Soft Butter
  • 370 g Sugar
  • 4 Eggs
  • 350 g All-Purpose Flour
  • 50 g Cocoa
  • 10 g Baking Powder
  • 250 ml Milk
  • 300 ml Cooking Cream
  • 150 g Sugar
  • 150 g Egg Yolks
  • 50 g Starch

  • Start by preheating your oven to 180 °C (356 °F). This ensures that your cupcakes will bake evenly. While the oven is heating, gather all your ingredients.
  • In a large mixing bowl, combine the all-purpose flour, cocoa, and baking powder. Whisk them together until well mixed. This step is crucial as it helps to evenly distribute the leavening agent throughout the dry ingredients.
  • In another bowl, beat the butter and 370g sugar until light and fluffy. This should take about 3 to 5 minutes. You want to see a change in color; it should become pale yellow. This step incorporates air into the batter, leading to a lighter cupcake.
  • Add the eggs, one at a time, mixing well after each addition. It’s essential to incorporate the eggs fully before adding the next one. This ensures a smooth batter.
  • Now, alternate adding the dry mixture and 250ml of milk to the butter and sugar mixture. Start by adding a third of the dry ingredients, mix, then add half of the milk. Repeat until all ingredients are incorporated. Be careful not to overmix; you want a homogeneous dough but not a tough batter.
  • Prepare your cupcake tray with paper liners. Use an ice cream scoop or a large spoon to fill each liner about two-thirds full with the batter. This prevents overflow during baking and helps achieve a nice dome shape.
  • Place the tray in the preheated oven and bake for about 18 to 20 minutes. To check for doneness, insert a toothpick into the center of a cupcake; it should come out clean.
  • While the cupcakes are baking, prepare the frosting. In a saucepan, combine the cooking cream, 150g sugar, and egg yolks. Whisk together and cook over low heat, stirring constantly to prevent sticking. The mixture should thicken, which may take about 10 to 15 minutes.
  • Once thickened, remove the saucepan from heat and let the frosting cool in a bowl. Once cooled, blend the frosting until smooth. Transfer it to a piping bag for easy decorating.
