Equipment

  • Baking Sheet
  • Oven
  • Mixing Bowl

Ingredients

  • 200 g Butter
  • 200 g Sugar
  • 2 large Eggs
  • 320 g Flour
  • 80 g Almond Flour
  • 40 g Cocoa
  • 1 tsp Vanilla Extract
  • 0.5 tsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 jar Cherry Jam
  • 100 g Milk Chocolate
  • 20 g Butter

Instructions

  • Start by taking butter at room temperature and mixing it with sugar. Use a mixer to beat them together until the mixture is creamy and light, which should take about ten minutes. Watch as it transforms into a fluffy mix, a great sign that you’re on the right track!
  • Add in the eggs, one at a time, along with the vanilla extract. Continue mixing until everything is smooth. Remember to scrape down the sides of the bowl so that every ingredient is well incorporated.
  • In a separate bowl, combine the flour, almond flour, cocoa, baking powder, baking soda, and salt. This mixture of dry ingredients will provide the essential structure for your cookies.
  • Once mixed, spoon the dry ingredients into the wet mixture. Gently fold them together using a spatula. The dough will be slightly soft and sticky, which is perfect! Wrap it in cling film and refrigerate for one to two hours. This step is essential as it helps the cookies maintain their shape while baking.
  • Preheat your oven to 180 degrees Celsius (355 Fahrenheit). Prepare a large baking tray by lining it with baking paper. This will prevent the cookies from sticking and make cleanup easier.
  • After the dough has chilled, remove it from the refrigerator. Shape it into walnut-sized balls. Flatten each ball gently between your palms, creating a small depression in the center of each cookie.
  • In the hollow space of each cookie, add a teaspoon of cherry jam. This is where the magic happens—imagine biting into a cookie and finding that sweet, tangy surprise!
  • Place the cookies on the baking tray, ensuring there’s enough space of about two to three centimeters (0.8 to 1.2 inches) between each. This spacing allows them to spread while baking.
  • Now, bake the cookies in the preheated oven for about fifteen to twenty minutes. Keep an eye on them; you want them to change color slightly, indicating they’re done. Once baked, transfer them to a cooling rack to cool completely.
  • While the cookies cool, melt the milk chocolate with butter in a bain-marie. Once melted, drizzle this delightful mixture over the cooled cookies. This step adds an elegant touch that makes them irresistible.
  • And voila! Your Chocolate Cherry Cookies are ready to be enjoyed. They are soft, aromatic, and packed with flavor. Perfect for sharing or indulging yourself!

Notes

  • Storage: To keep your cookies fresh, store them in an airtight container at room temperature for up to one week.
  • Freezing: You can freeze the cookie dough for up to three months. Just shape the balls and freeze them on a tray before transferring to a freezer bag. Bake them directly from frozen, adding a couple of extra minutes to the cooking time.
  • Variation: Feel free to experiment with different jams or even add nuts for extra crunch.
  • Serving Suggestions: These cookies pair wonderfully with a glass of milk or a cup of coffee. They make a perfect after-school snack!
  • Gift Idea: Package these cookies in a decorative box to gift to friends or family; they make a lovely homemade present.
