Ingredients
  

  • 1 box chocolate cake mix 15.25 oz.
  • 2 large eggs
  • 1/2 cup unsalted butter (1 stick), melted
  • 1 tsp vanilla
  • 1/4 cup sugar for rolling the cookies

  • Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly and thoroughly. A properly preheated oven is crucial for achieving that perfect texture.
  • In a medium bowl, combine the eggs, melted butter, and vanilla. Use a whisk to mix until everything is well combined. You’re looking for a smooth consistency without any lumps.
  • Add the chocolate cake mix to the bowl and stir gently until fully incorporated. The mixture should be thick and a little bit sticky. Don’t overmix, as this can lead to tough cookies.
  • If you’re adding any mix-ins like chocolate chips or peanut butter cups, fold them in at this point. The more, the merrier!
  • Chill the dough in the refrigerator for about 15 to 30 minutes. Chilling helps the cookies hold their shape and makes them easier to roll.
  • Once chilled, use your hands to roll the dough into balls, about the size of a tablespoon. You may want to lightly spray your fingers with oil to prevent sticking.
