Instructions
Prepare the chicken: Shred or dice your cooked chicken and place it in a mixing bowl.

Mash the avocado: Cut the avocado in half, remove the pit, scoop the flesh into a bowl, and mash it until smooth.
Assemble the sandwich: Spread mashed avocado on one slice of bread, layer with chipotle chicken mixture, and sprinkle cheese on top.
Top it off: Place another slice of bread on top and press down gently.
Heat the skillet: Melt one tablespoon of butter in a skillet over medium heat.
