  • 1 can 15-ounce chickpeas Rinsed and drained
  • 1 stalk large celery Diced
  • 1 small red onion Diced
  • 1.5 cups cherry tomatoes Halved
  • 1 each bell pepper Diced (any color)
  • 12 ounces canned albacore tuna in water Drained
  • 2.5 cups fresh spinach
  • 2 tablespoons fresh parsley Chopped
  • 0.33 cup feta cheese Crumpled
  • 3 tablespoons freshly squeezed lemon juice
  • 0.25 cup extra-virgin olive oil
  • 1.5 teaspoons garlic Minced
  • Kosher salt To taste
  • Freshly ground black pepper To taste

Instructions
 

  • In a large mixing bowl, add the chickpeas and mash them slightly using a fork. This helps them blend better with the other ingredients while still providing some texture.
  • Next, incorporate the cherry tomatoes, celery, bell pepper, red onion, drained tuna, spinach, and half of the feta cheese into the bowl. Gently stir to combine the ingredients without mashing them too much.
  • In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper. Adjust the seasoning based on your taste preferences.
  • Pour the dressing over the salad mixture in the large bowl. Gently toss everything together to ensure the ingredients are well coated without breaking them apart.
  • Finally, sprinkle the chopped parsley and the remaining feta cheese over the top. Give it a light toss to combine once more before serving.
