  • 1 can (15 oz) Chickpeas, drained and rinsed Provides a creamy texture and nutty flavor.
  • 1/2 cup Natural nut butter (almond or peanut) Adds creaminess and richness.
  • 1/3 cup Maple syrup or honey Natural sweetener that binds ingredients.
  • 1 teaspoon Vanilla extract Enhances flavor.
  • 1/2 teaspoon Baking soda Creates a softer texture.
  • 1/4 teaspoon Sea salt Balances sweetness.
  • 1/2 cup Chocolate chips Provides bursts of chocolatey goodness.

Instructions
 

  • 1. Drain and rinse the canned chickpeas under cool water.
  • 2. In a food processor, combine chickpeas, nut butter, maple syrup or honey, vanilla extract, baking soda, and sea salt. Process until smooth and creamy.
  • 3. Scrape down the sides of the food processor to ensure all ingredients are well incorporated.
  • 4. Add chocolate chips, and optional shredded coconut and chopped nuts. Pulse to combine.
  • 5. Portion out the dough and roll into balls.
  • 6. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
  • 7. Enjoy chilled or store in an airtight container in the refrigerator.

Notes

These cookie dough balls can be customized with various mix-ins and flavors. Store in an airtight container for up to a week.
