  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 1 medium zucchini sliced into half-moons
  • 1 cup carrots sliced thinly
  • 1 cup broccoli florets
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to heat until it shimmers.
  • Add the diced onion to the skillet and sauté for about 2 to 3 minutes, or until it becomes translucent.
  • Incorporate the minced garlic and continue to cook for another 30 seconds, stirring frequently.
  • Add the chicken pieces to the skillet, seasoning them with salt, pepper, oregano, and paprika. Cook for about 5 to 7 minutes until browned and cooked through.
  • Add the chopped bell pepper, sliced zucchini, carrots, and broccoli florets to the skillet. Stir well to combine.
  • Cover the skillet with a lid and cook for an additional 5 to 7 minutes.
  • Remove the lid and stir everything together. Taste for seasoning, adding more salt and pepper if necessary.
  • Remove from heat and garnish with freshly chopped parsley.
  • Serve warm, either on its own or over a bed of rice or quinoa.

Notes

This dish can be made ahead of time and stored in the refrigerator for up to three days. Feel free to adjust the vegetable quantities based on your preferences.
