Chicken and Vegetables Skillet is an easy and flavorful dish that brings together tender chicken pieces, colorful vegetables, and aromatic seasonings, all cooked to perfection in one pan.

Instructions
Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to heat until it shimmers.
Add the diced onion to the skillet and sauté for about 2 to 3 minutes, or until it becomes translucent.
Incorporate the minced garlic and continue to cook for another 30 seconds, stirring frequently.
Add the chicken pieces to the skillet, seasoning them with salt, pepper, oregano, and paprika. Cook for about 5 to 7 minutes until browned and cooked through.
Add the chopped bell pepper, sliced zucchini, carrots, and broccoli florets to the skillet. Stir well to combine.
Cover the skillet with a lid and cook for an additional 5 to 7 minutes.
Remove the lid and stir everything together. Taste for seasoning, adding more salt and pepper if necessary.
Remove from heat and garnish with freshly chopped parsley.
Serve warm, either on its own or over a bed of rice or quinoa.
