Dumpling Ingredients

Instructions
 

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion, minced garlic, sliced carrots, and diced celery. Sauté for about 5-7 minutes until softened.
  • Sprinkle in the dried thyme, dried parsley, and black pepper. Stir well to coat the vegetables.
  • Gradually add the chicken broth, scraping up any bits stuck to the bottom. Bring to a gentle boil.
  • Stir in the shredded chicken and frozen peas. Simmer on low heat for about 10-15 minutes.
  • In a separate bowl, combine flour, baking powder, salt, and chopped parsley. In another bowl, whisk milk and melted butter, then combine with dry ingredients.
  • Drop spoonfuls of the dumpling batter into the simmering broth, spacing them evenly.
  • Cover the pot and let the dumplings cook for about 15-20 minutes without lifting the lid.
  • Check that the dumplings have risen and are cooked through. Serve hot, garnished with fresh parsley if desired.

Notes

Consider adding more vegetables or using different proteins for variations. Serve with crusty bread or a side salad for a complete meal.
