Instructions
1. Cook ground beef in a skillet over medium heat until browned. Drain fat and stir in taco seasoning. Allow to cool.
2. In a mixing bowl, combine softened cream cheese and shredded cheddar cheese until smooth.
3. Add cooked beef, diced bell peppers, diced tomatoes, and chopped green onions to the cheese mixture. Mix well.
4. Spread the filling evenly on a tortilla, leaving half an inch from the edges.
5. Roll the tortilla tightly from one end to the other.
6. Slice the rolled tortilla into 1-inch thick pinwheels.
7. Repeat with remaining tortillas and filling. Chill if desired before serving.
8. Serve with sour cream, salsa, or guacamole for dipping.
Notes
These pinwheels can be made ahead of time and stored in the refrigerator for up to 24 hours.
