Instructions
1. In a small bowl, combine warm water and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until frothy.
2. In a large mixing bowl, combine the all-purpose flour and salt. Pour in the melted butter and the activated yeast mixture. Mix until a rough dough forms.
3. Transfer the dough to a lightly floured surface. Knead for about 8-10 minutes until smooth and elastic.
4. Place the kneaded dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
5. Prepare the filling by mixing minced garlic and shredded cheese in a bowl.
6. Once the dough has risen, punch it down and divide into 12-16 portions. Flatten each portion, place a spoonful of filling in the center, and seal.
7. Place the rolls seam-side down on a greased baking sheet. Cover with a towel and let rise for another 30 minutes.
8. Preheat your oven to 375°F (190°C).
9. Brush the tops of the rolls with melted butter mixed with minced garlic.
10. Bake for 20-25 minutes until golden brown and cheese is bubbling.
11. Remove from oven, brush with olive oil, and sprinkle with chopped parsley before serving warm.
