Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes).
2. In a skillet over medium heat, cook the sausage for 5-7 minutes until browned.
3. Add the chopped onion to the skillet and sauté for 3-4 minutes until translucent. Then add minced garlic and sauté for an additional 1-2 minutes.
4. Reduce heat to low and pour in the heavy cream, stirring to combine and simmer gently.
5. Gradually add shredded cheddar cheese, stirring until melted and integrated into the sauce.
6. Season with salt and pepper to taste.
7. Drain the pasta and add it to the skillet, tossing to coat with the sauce.
8. If the sauce is too thick, add a splash of reserved pasta cooking water to achieve desired consistency.
9. Serve immediately, garnished with chopped parsley.
