Instructions
Preheat your oven to 400°F (200°C).
Prepare the garlic by slicing off the top of the bulb, drizzling with olive oil, and wrapping in aluminum foil.
Roast the garlic in the oven for 30-35 minutes until soft and golden brown.
In a mixing bowl, combine cream cheese, sour cream, and shredded cheese until smooth.
Once the garlic is roasted, squeeze the cloves into the cheese mixture and stir until combined.
Season with salt, pepper, and fold in fresh herbs if using.
Transfer the mixture to a baking dish and sprinkle additional cheese on top if desired.
Bake for 20-25 minutes until bubbly and golden brown.
Let cool for a few minutes before serving with dippers.
