1/2cupSour CreamOptional, for serving.
Instructions
1. Peel and dice the potatoes. Place them in a large pot, cover with water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 15-20 minutes until fork-tender.
2. In a skillet, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes.
4. Drain the cooked potatoes and return them to the pot. Mash until smooth, then mix in the sautéed onion and garlic.
5. Stir in the cheddar cheese until melted and fully combined. Season with salt and pepper to taste.
6. Warm the tortillas slightly. Scoop a generous amount of filling onto each tortilla and roll them up to form burritos.
7. In the skillet, place the burritos seam-side down and cook for 3-4 minutes on each side until golden brown and crispy.
8. Serve warm with sour cream on the side if desired.
Notes
These burritos can be customized with additional ingredients like jalapeños, herbs, or beans. They are also great for meal prep and can be frozen for later use.
