Instructions
Preheat your oven to 375°F (190°C).
In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions, about 3-5 minutes. Drain and set aside.
In a large mixing bowl, combine the drained tortellini, pepperoni, marinara sauce, and olive oil. Stir gently to coat.
Add 1 cup of mozzarella cheese and Italian seasoning to the mixture. Mix well.
Grease a 9x13-inch baking dish. Pour the tortellini mixture into the dish, spreading evenly.
Sprinkle the remaining mozzarella and Parmesan cheese on top.
Cover with aluminum foil and bake for 20 minutes.
Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
Let sit for 5 minutes before serving.
Serve warm, garnished with fresh herbs if desired.
