Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions, about 3-5 minutes. Drain and set aside.
  • In a large mixing bowl, combine the drained tortellini, pepperoni, marinara sauce, and olive oil. Stir gently to coat.
  • Add 1 cup of mozzarella cheese and Italian seasoning to the mixture. Mix well.
  • Grease a 9x13-inch baking dish. Pour the tortellini mixture into the dish, spreading evenly.
  • Sprinkle the remaining mozzarella and Parmesan cheese on top.
  • Cover with aluminum foil and bake for 20 minutes.
  • Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  • Let sit for 5 minutes before serving.
  • Serve warm, garnished with fresh herbs if desired.
