Instructions
Preheat your oven to 375°F (190°C).
Place each chicken breast between two sheets of plastic wrap and gently pound them to about 1/2 inch thick.
In a mixing bowl, combine cream cheese, cheddar cheese, jalapenos, corn, garlic powder, salt, and pepper.
Spoon the stuffing mixture onto each flattened chicken breast and fold over, securing the edges.
Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
Transfer the skillet to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
Let the chicken rest for 5 minutes before serving. Garnish with cilantro if desired.
Notes
For variations, consider using different cheeses or adding vegetables to the stuffing.
