  • 4 pieces Boneless Skinless Chicken Breasts Each weighing around 6 ounces.
  • 2 medium Jalapenos Finely chopped.
  • 8 ounces Cream Cheese Softened.
  • 1 cup Shredded Cheddar Cheese Sharp cheddar preferred.
  • 1 cup Fresh Corn Kernels Cut from about 2 ears of corn.
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive Oil For cooking.
  • 2 tablespoons Fresh Cilantro Chopped, for garnish (optional).

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Place each chicken breast between two sheets of plastic wrap and gently pound them to about 1/2 inch thick.
  • In a mixing bowl, combine cream cheese, cheddar cheese, jalapenos, corn, garlic powder, salt, and pepper.
  • Spoon the stuffing mixture onto each flattened chicken breast and fold over, securing the edges.
  • Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes before serving. Garnish with cilantro if desired.

Notes

For variations, consider using different cheeses or adding vegetables to the stuffing.
