  • 1 pound Ground Beef Lean ground beef can be used for a healthier option.
  • 2 cups Shredded Cheese Blend A mix of cheddar and Monterey Jack is ideal.
  • 12 ounces Tortellini Preferably cheese-filled, fresh or frozen.
  • 15 ounces Enchilada Sauce Red enchilada sauce is necessary for flavor.
  • 1 medium Onion Diced, adds depth and sweetness.
  • 2 cloves Garlic Minced, enhances flavor.
  • 1 tablespoon Olive Oil Used for sautéing the onion and garlic.

Spices

  • 1 teaspoon Chili Powder For seasoning the beef.
  • 1 teaspoon Cumin For seasoning the beef.
  • to taste Salt For seasoning the beef.

Optional Garnish

  • 1 handful Fresh Cilantro Chopped, for garnish.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  • Add minced garlic and sauté for an additional minute.
  • Add ground beef, breaking it apart. Cook for 6-8 minutes until browned. Drain excess fat.
  • Sprinkle in chili powder, cumin, and salt. Stir well for 1-2 minutes.
  • Pour in enchilada sauce, mixing with beef. Let it simmer for 2-3 minutes.
  • Cook tortellini according to package instructions in salted boiling water. Drain and set aside.
  • In a large mixing bowl, combine cooked tortellini with beef and enchilada sauce mixture.
  • Transfer mixture into a greased 9x13 inch baking dish.
  • Sprinkle shredded cheese over the top.
  • Cover with aluminum foil and bake for 20 minutes.
  • Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  • Let cool for 5 minutes before serving. Garnish with chopped cilantro if desired.

Notes

For variations, consider using black beans instead of beef for a vegetarian option or adding more vegetables like spinach or zucchini.
