Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and sauté for an additional minute.
Add ground beef, breaking it apart. Cook for 6-8 minutes until browned. Drain excess fat.
Sprinkle in chili powder, cumin, and salt. Stir well for 1-2 minutes.
Pour in enchilada sauce, mixing with beef. Let it simmer for 2-3 minutes.
Cook tortellini according to package instructions in salted boiling water. Drain and set aside.
In a large mixing bowl, combine cooked tortellini with beef and enchilada sauce mixture.
Transfer mixture into a greased 9x13 inch baking dish.
Sprinkle shredded cheese over the top.
Cover with aluminum foil and bake for 20 minutes.
Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
Let cool for 5 minutes before serving. Garnish with chopped cilantro if desired.
Notes
For variations, consider using black beans instead of beef for a vegetarian option or adding more vegetables like spinach or zucchini.
