Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Wash and dry the yellow squash.
  • Slice the yellow squash into rounds about 1/4 inch thick.

  • Arrange the squash rounds in a single layer on the prepared baking sheet.
  • Sprinkle the shredded cheddar cheese evenly over the squash.
  • Add the grated Parmesan cheese on top of the cheddar.
  • Bake for about 20-25 minutes until golden brown and tender.

Notes

Leftover rounds can be stored in an airtight container in the refrigerator for up to three days. Reheat in the oven for a few minutes to restore crispiness.
