Instructions
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy.
Add melted butter and salt to the yeast mixture. Gradually add flour, mixing until a dough forms.
Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour.
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Punch down the risen dough, divide into pieces, and roll each into a rope about 12 inches long.
Flatten each rope, place cheese in the center, fold over, and seal edges.
Boil water with baking soda, then boil each pretzel for 30 seconds on each side.
Brush pretzels with beaten egg and sprinkle with coarse sea salt.
Bake for 12-15 minutes until golden brown. Let cool slightly before serving.
