Ingredients
  

  • 9 cups Crispix cereal
  • 8 oz cashews
  • 2 cups sweetened flaked coconut
  • ½ cup butter
  • ½ cup light brown sugar
  • ½ cup light corn syrup
  • 1 tsp vanilla extract
  • ½ tsp baking soda

Instructions
 

  • Preheat your oven to 250ºF.
  • In a large bowl, combine the Crispix cereal, cashews, and sweetened flaked coconut.
  • In a medium saucepan over medium-high heat, combine the brown sugar, corn syrup, and butter.
  • Bring to a boil, stirring occasionally. Remove from heat and stir in the vanilla extract and baking soda.
  • Pour over the cereal mixture, tossing to coat evenly.
  • Pour the mixture into a greased 9×13-inch pan.
  • Bake for 1 hour, stirring every 20 minutes.
  • Pour onto wax or parchment paper to cool. Break into pieces.

Notes

  • Tip 1: You can substitute any variety of Chex cereal for Crispix.
  • Tip 2: Feel free to leave out the coconut if you aren’t a fan.
  • Tip 3: This snack mix can be made ahead of time and stored in an air-tight container.
