  • 1 cup Bell peppers, diced Mix of red, yellow, and green for color.
  • 1 medium Onion, finely chopped Adds savory depth of flavor.
  • 3 cloves Garlic, minced Infuses the dish with aromatic goodness.
  • 2 cups Chicken broth Adds flavor to the rice.
  • 2 tablespoons Olive oil For sautéing the vegetables.
  • 1 handful Green onions, sliced For garnish.
  • 1 tablespoon Lemon juice Brightens the flavors.

Instructions
 

  • Prepare all ingredients: peel and devein shrimp, chop vegetables, and measure rice.
  • Heat olive oil in a large pot over medium heat for about 1-2 minutes.
  • Add chopped onion and sauté for 3-4 minutes until translucent.
  • Incorporate minced garlic and diced bell peppers, sauté for an additional 2-3 minutes.
  • Sprinkle in Cajun seasoning and cook for 1 minute to toast the spices.
  • Add uncooked rice and stir to combine with the vegetable mixture.
  • Pour in chicken broth and bring to a boil, stirring gently.
  • Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
  • Add shrimp, cover, and cook for an additional 5-7 minutes until shrimp is pink and opaque.
  • Stir in lemon juice, check seasoning, and adjust with salt and pepper if necessary.
  • Garnish with sliced green onions and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days.
