Incorporate minced garlic and diced bell peppers, sauté for an additional 2-3 minutes.
Sprinkle in Cajun seasoning and cook for 1 minute to toast the spices.
Add uncooked rice and stir to combine with the vegetable mixture.
Pour in chicken broth and bring to a boil, stirring gently.
Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
Add shrimp, cover, and cook for an additional 5-7 minutes until shrimp is pink and opaque.
Stir in lemon juice, check seasoning, and adjust with salt and pepper if necessary.
Garnish with sliced green onions and serve.
