Cajun Salmon and Shrimp: A Flavorful One-Pot Meal

Ingredients
  

Seafood

  • 1 pound Salmon Fillets Fresh salmon fillets, firm and bright in color.
  • 1 pound Shrimp Raw, large or jumbo, peeled and deveined.

Vegetables

  • 1 medium Onion Chopped.
  • 1 cup Bell Peppers One red and one green, diced.
  • 4 cloves Garlic Fresh, minced.

Seasoning

  • 2 tablespoons Cajun Seasoning Blend of spices including paprika and cayenne.

Base

  • 2 cups Chicken Broth Low-sodium.
  • 1 cup Rice Long-grain, such as basmati or jasmine.
  • 2 tablespoons Olive Oil For sautéing.

Garnish

  • 1/4 cup Fresh Parsley Chopped, for garnish.

Instructions
 

  • Gather all ingredients. Rinse salmon and shrimp under cold water and pat dry.
  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add chopped onion and sauté for 3-4 minutes until translucent.
  • Add minced garlic and diced bell peppers, stirring for 2-3 minutes.
  • Sprinkle in Cajun seasoning and cook for 1 minute.
  • Pour in chicken broth and bring to a gentle boil.
  • Add washed rice, stir, cover, and simmer for 15 minutes.
  • Season salmon fillets with salt and pepper, then lay them on top of the rice.
  • Add shrimp on top of the salmon, cover, and cook for another 7-10 minutes.
  • Turn off heat and let sit covered for 5 minutes.
  • Garnish with chopped parsley and serve directly from the pot.

Notes

For variations, consider adding seasonal vegetables or increasing the spiciness with jalapeños.
