Fresh salmon fillets, firm and bright in color.

Raw, large or jumbo, peeled and deveined.

Bell Peppers
One red and one green, diced.

Fresh, minced.
Seasoning

Cajun Seasoning
Blend of spices including paprika and cayenne.

Chicken Broth
Low-sodium.

Rice
Long-grain, such as basmati or jasmine.

For sautéing.
Garnish

Chopped, for garnish.
Instructions
Gather all ingredients. Rinse salmon and shrimp under cold water and pat dry.
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté for 3-4 minutes until translucent.
Add minced garlic and diced bell peppers, stirring for 2-3 minutes.
Sprinkle in Cajun seasoning and cook for 1 minute.
Pour in chicken broth and bring to a gentle boil.
Add washed rice, stir, cover, and simmer for 15 minutes.
Season salmon fillets with salt and pepper, then lay them on top of the rice.
Add shrimp on top of the salmon, cover, and cook for another 7-10 minutes.
Turn off heat and let sit covered for 5 minutes.
Garnish with chopped parsley and serve directly from the pot.
Notes
For variations, consider adding seasonal vegetables or increasing the spiciness with jalapeños.
