Instructions
1. Combine warm water, active dry yeast, and granulated sugar in a large mixing bowl. Stir gently and let it sit for about 5-10 minutes until frothy.
2. In another bowl, mix all-purpose flour and salt. Pour the yeast mixture and melted butter into the flour mixture. Stir until a dough forms.
3. Transfer the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
4. Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour until doubled in size.
5. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
6. In a large pot, bring 10 cups of water to a boil and carefully add the baking soda.
7. Punch down the risen dough, turn it out onto a floured surface, and divide into 6 portions. Roll each into a rope and cut into 1-inch pieces.
8. Drop the pretzel bites into the boiling water in batches for about 30 seconds, then remove with a slotted spoon and place on the baking sheet.
9. Brush the boiled bites with beaten egg and sprinkle with coarse sea salt.
10. Bake for 12-15 minutes until golden brown. Brush with melted butter after baking.
