  • 4 lobster tails Lobster Tails shells removed
  • 10 to 12 tablespoons Unsalted Butter cut into cubes
  • 6 cloves Garlic crushed or sliced in half
  • 3 to 4 sprigs Rosemary fresh
  • 4 to 5 sprigs Thyme fresh
  • 1/2 teaspoon Salt sea salt or citrus salt
  • 1 teaspoon Black Pepper
  • 1 lemon Lemon sliced and zested
  • 1/2 teaspoon Chili Flakes
  • 2 tablespoons Chives minced or fresh herbs

Instructions
 

  • First, prepare the lobster tails by carefully removing the meat from the shells. It’s best to wear gloves to protect your hands from any sharp edges. Using sharp scissors, cut along the inside of the tail where the shell is thinnest. Gently pull the meat away from the shells, ensuring you keep it intact.
  • Once you’ve separated the lobster meat from the shells, you should be left with beautiful, whole lobster tails. Set these aside as you prepare for the butter bath.
  • In a medium saucepan, add your unsalted butter over medium heat. Allow it to melt slowly and gently, stirring occasionally to help it along.
  • As the butter melts, you’ll notice some foam forming on the surface. Use a spoon to carefully remove this foam, which can affect the clarity of the sauce.
  • Next, it’s time to infuse the butter. Add the fresh rosemary, thyme, and garlic into the melted butter. Lower the heat to medium-low and swirl the pan to allow the flavors to meld.
  • Now, it’s time to add the lobster tails. Gently place them into the butter bath, ensuring they’re well submerged. Season them with salt and black pepper to enhance their natural flavor.
  • Using a spoon, continuously baste the lobster tails with the melted butter, allowing the flavors to penetrate the meat. This technique helps to keep the lobster moist and flavorful.
  • After approximately 5 to 7 minutes, once the lobster is cooked through and opaque, it’s crucial to remove them from the heat. Ensure that they are perfectly cooked, tender, and succulent.
  • Before serving, strain the melted butter into a bowl using a sieve to separate any solids. This liquid gold is what will drench your lobster, making it utterly delicious and luxurious.
