Ingredients
  

  • 1 pound ground turkey or chicken
  • 1 egg
  • 1/2 cup panko bread crumbs

  • 2 tablespoons extra virgin olive oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced or grated
  • 1 inch fresh ginger, grated
  • 1 tablespoon garam masala
  • 2 teaspoons curry powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon cayenne pepper more or less to taste
  • 1 can (6 ounces) tomato paste
  • 1 can (14 ounces) full fat coconut milk
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons butter
  • 1/4 cup fresh cilantro, roughly chopped
  • steamed rice and naan, for serving

Instructions
 

  • 1. Preheat your oven to 450 degrees F. Line a baking sheet with parchment paper to prevent sticking. This step is crucial as it helps cook the meatballs evenly and makes for easy cleanup later.
  • 2. In a large bowl, combine the ground turkey, egg, panko bread crumbs, and a pinch of kosher salt and pepper. Mix everything together until just combined, being careful not to overwork the mixture. This helps keep the meatballs tender. Coat your hands with a bit of olive oil and roll the mixture into tablespoon-sized balls. Place them on the prepared baking sheet, making about 15 to 20 meatballs.
