Ingredients
  

  • 1 pound chicken tenders
  • ½ cup all-purpose flour
  • 2 large eggs
  • ½ cup panko bread crumbs
  • ½ cup finely grated Parmesan-Reggiano
  • Frying oil
  • 6 burrito-sized flour tortillas
  • cup ranch dressing
  • Buffalo sauce (I used Frank’s Buffalo Sauce)
  • 4 slices provolone halved
  • Iceberg lettuce shredded

Instructions
 

  • Start by placing the chicken tenders on a cutting board. This is the first step in making your flavorful wraps.
  • Create an assembly line with three shallow bowls. In the first bowl, add the flour. This will give the chicken a nice coating.
  • In the second bowl, beat the eggs until well combined. This will help the breadcrumbs stick to the chicken.
  • In the third bowl, combine the panko bread crumbs, Parmesan cheese, and a pinch of salt. This mixture will add a delicious crunch to the chicken.
  • Take each chicken tender and dip it into the bowl with the flour, coating it completely. Shake off any excess to avoid a clumpy texture.
  • Next, dip the floured tender into the bowl with the beaten eggs, ensuring it's fully coated.
  • Then, roll the tender in the breadcrumb mixture, pressing lightly to ensure it adheres well.
  • Heat some frying oil in a medium skillet over medium heat. Once hot, carefully place the breaded chicken tenders into the pan.
  • Fry the tenders until they are crispy and golden on both sides, about 2 to 3 minutes per side. You want them to be cooked through and have a nice crunch.
  • Once cooked, transfer the chicken to a paper towel-lined plate to drain any excess oil. Allow them to cool slightly.
  • Cut the crispy chicken tenders into bite-sized pieces and add them to a mixing bowl.
  • Pour the buffalo sauce over the chicken pieces and toss until they're evenly coated. Adjust the amount of sauce to your desired spice level.
  • Now, assemble the wraps! Place a large burrito-sized tortilla on a clean cutting board.
  • Spread a tablespoon of ranch dressing in the center of the tortilla. This adds a creamy flavor that pairs perfectly with the spicy chicken.
  • Add a few slices of provolone to the center of the tortilla.
  • Top with the buffalo chicken pieces and a handful of shredded iceberg lettuce.
