Meatball Ingredients

  • 1 pound Ground Chicken Main protein for the meatballs.
  • 1 cup Breadcrumbs Binding agent for the meatballs.
  • ½ cup Buffalo Sauce Infuses meatballs with spicy flavor.
  • 1 large Egg Acts as a binder in the meatball mixture.
  • 1 teaspoon Garlic Powder Enhances overall flavor.
  • 1 teaspoon Onion Powder Adds subtle sweetness.

Slaw Ingredients

  • 2 cups Celery Thinly sliced for slaw.
  • 1 cup Shredded Carrots Adds color and sweetness.
  • ½ cup Mayonnaise Creamy dressing for the slaw.
  • 1 tablespoon Lemon Juice Brightens the slaw.

Sandwich Ingredients

  • 4 pieces Sub Rolls To hold the meatballs and slaw.

Instructions
 

  • In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, Buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  • Preheat your oven to 400°F (200°C). Roll the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
  • Bake the meatballs for approximately 20-25 minutes, or until cooked through and golden brown.
  • In a medium bowl, combine the sliced celery, shredded carrots, mayonnaise, and lemon juice. Mix well and season with salt and pepper to taste.
  • Once the meatballs are done, slice the sub rolls open and place 3-4 meatballs onto each roll. Spoon extra Buffalo sauce over the top if desired.
  • Pile the prepared celery slaw on top of the meatballs in each sandwich. Serve immediately.

Notes

Customize the heat level of the Buffalo sauce and try different proteins or slaw ingredients for variations.
