  • 1 tablespoon Olive oil
  • 1/2 medium Red onion, diced
  • 1/2 medium Green pepper, diced
  • 1/4 cup Celery, diced
  • 1 teaspoon Dried oregano
  • 2 cloves Garlic, minced
  • 2 cups Black beans, cooked (or use one 15-ounce can, drained and rinsed)
  • 2 cups Quinoa, cooked
  • Salt and pepper to taste
  • Tabasco sauce (optional)
  • Lime wedges (optional)

Instructions
 

  • In a large skillet, warm the olive oil over medium heat. Allow it to heat up for about a minute. You’ll know it’s ready when it shimmers slightly. This is important for getting a good sear on your veggies!
  • Add the diced red onion, green pepper, celery, and oregano to the skillet. Cook, stirring occasionally, for about 5 minutes until the vegetables begin to soften and the onion becomes translucent. The aroma will fill your kitchen!
  • Next, toss in the minced garlic and continue cooking over medium heat, stirring frequently, for about two more minutes. You want to be careful here; garlic can burn quickly, and burnt garlic will make your dish taste bitter.
  • Gently stir in the cooked black beans and quinoa, ensuring everything is well combined. Continue cooking over medium-low heat until everything is heated through, about 5 minutes. This allows the flavors to meld together beautifully.
  • Once everything is warmed, stir in salt and pepper to taste. If you’re feeling adventurous, add several dashes of Tabasco sauce for a kick. Mix well!
