Ingredients
  

  • 1 Egg
  • 2 Egg whites
  • 1 tbsp Skim milk
  • Salt and fresh pepper
  • Oil spray
  • 1/2 cup Broccoli, cooked
  • 1 slice Swiss cheese, WW reduced fat

Instructions
 

  • In a small bowl, crack the egg and add the egg whites, skim milk, salt, and fresh pepper. Use a whisk or fork to beat the mixture until it’s well combined and slightly frothy.
  • Next, heat a medium non-stick skillet over medium heat. Once the skillet is warm, spray it lightly with oil spray.
  • Carefully pour the beaten egg mixture into the skillet, tilting the pan to ensure the eggs cover the entire surface.
  • Once the eggs are mostly set but still slightly runny on top, reduce the heat to low flame.
  • Now, lay the Swiss cheese slice right in the center of the eggs. Then, sprinkle the cooked broccoli on top of the cheese.
  • As the cheese begins to melt and the eggs are set, use your spatula to carefully fold the sides of the omelet over the fillings.
  • Allow the folded omelet to cook for an additional minute or so, just until the insides are heated through and the cheese is melted.
  • Carefully slide the omelet onto a plate. You can garnish it with extra broccoli or a sprinkle of pepper if desired.
