In a small bowl, crack the egg and add the egg whites, skim milk, salt, and fresh pepper. Use a whisk or fork to beat the mixture until it’s well combined and slightly frothy.
Next, heat a medium non-stick skillet over medium heat. Once the skillet is warm, spray it lightly with oil spray.
Carefully pour the beaten egg mixture into the skillet, tilting the pan to ensure the eggs cover the entire surface.
Once the eggs are mostly set but still slightly runny on top, reduce the heat to low flame.
Now, lay the Swiss cheese slice right in the center of the eggs. Then, sprinkle the cooked broccoli on top of the cheese.
As the cheese begins to melt and the eggs are set, use your spatula to carefully fold the sides of the omelet over the fillings.
Allow the folded omelet to cook for an additional minute or so, just until the insides are heated through and the cheese is melted.
Carefully slide the omelet onto a plate. You can garnish it with extra broccoli or a sprinkle of pepper if desired.
