Ingredients
  

  • 1 tablespoon olive oil
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • 8 large eggs
  • Salt and pepper to taste
  • 4 large flour tortillas
  • ½ cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • ½ cup chopped fresh spinach
  • Salsa or hot sauce optional, for garnish

Instructions
 

  • Start by heating the olive oil in a large skillet over medium heat. You want it hot enough that it shimmers, which will ensure your bell peppers and onions sauté beautifully. This step usually takes about one minute.
  • Next, add the diced bell peppers and diced onions to the skillet. Sauté them for about three to four minutes until they soften and become fragrant. You’re looking for a lovely golden color and a sweet aroma wafting through the air!
  • While the vegetables are cooking, crack the eggs into a bowl. Season them generously with salt and pepper. Whisk the eggs together until they’re completely blended with a bit of air incorporated.
  • Pour the whisked eggs into the skillet with the sautéed vegetables. Stir gently, allowing the mixture to cook until the eggs are just set. This should take about three to four minutes. You want them to be fluffy and slightly soft, not overcooked.
  • In a separate skillet or in the microwave, warm the flour tortillas. Heating them will make them pliable and easier to roll. Just a minute or so in the microwave will do the trick!
  • Once your eggs are cooked, it’s time to assemble the burritos! Lay a warm tortilla on a flat surface and spoon a generous portion of the scrambled eggs with vegetables down the center.
  • On top of the eggs, add the black beans, shredded cheddar cheese, and a handful of chopped fresh spinach. You can adjust the quantities based on your preference!
  • Now comes the fun part: folding your burrito! Fold in the sides of the tortilla, and then roll it up tightly from the bottom. Ensure that all the fillings are nicely tucked in.
  • Repeat this process for the remaining tortillas until everything is assembled. Each burrito will be a little treasure of flavor!
