Instructions
1. In a medium saucepan, bring 2 cups of chicken broth to a boil. Add 1 cup of orzo and stir gently. Reduce heat and simmer for 8-10 minutes until al dente. Drain and set aside.
2. Season 1 pound of chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
3. In the same skillet, reduce heat to medium and add cooked orzo. Stir in Boursin cheese and Parmesan cheese until melted and creamy. Add chicken back and stir in spinach until wilted.
4. Taste and adjust seasoning with salt and pepper. Transfer to a serving platter and garnish with parsley.
