Instructions
 

  • 1. Prepare your frying oil in a large skillet or pot, heating enough vegetable oil to submerge the fritters about 2 inches deep to 350°F.
  • 2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, and granulated sugar. Whisk until well combined.
  • 3. In a separate bowl, beat the egg, then add yogurt and vanilla extract. Mix until smooth.
  • 4. Pour the wet mixture into the dry ingredients and gently fold together, being careful not to overmix.
  • 5. Gently fold in the fresh blueberries.
  • 6. Drop dollops of batter into the hot oil, frying in batches for 2-3 minutes on each side until golden brown.
  • 7. Remove fritters from oil and place on paper towels to drain excess oil.
  • 8. Dust with powdered sugar if desired and serve warm.

Notes

Store leftover fritters in an airtight container for up to two days. For longer storage, refrigerate and reheat in an oven for crispiness.
