Instructions
In a spacious mixing bowl, combine the cubed chicken breast with light soy sauce, dark soy sauce, cornstarch, egg white, and 2 teaspoons of freshly cracked black pepper. Allow the chicken to marinate at room temperature for a minimum of 20 minutes.
Heat vegetable oil in a large skillet over high heat. Stir-fry the onion wedges and bell pepper chunks for approximately 3-4 minutes until slightly softened. Add minced garlic and ginger, stir-frying for an additional minute.
Push the vegetables to the side and add the marinated chicken to the skillet. Stir-fry for approximately 4-5 minutes until the chicken is cooked through and golden brown.
In a separate bowl, whisk together chicken stock, honey, rice wine vinegar, and 1 tablespoon of freshly cracked black pepper. Pour this sauce over the chicken and vegetables, stirring to coat. Cook for an additional 2-3 minutes until the sauce thickens.

Notes
