  • 1.5 lbs Boneless, Skinless Chicken Breast cut into 1-inch cubes
  • 3 tablespoons Light Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 2 tablespoons Cornstarch
  • 1 large Egg White
  • 2 teaspoons Freshly Cracked Black Pepper
  • 3 tablespoons Vegetable Oil
  • 1 large Yellow Onion cut into wedges
  • 2 large Green Bell Peppers deseeded and cut into chunks
  • 5 cloves Garlic minced
  • 2 tablespoons Fresh Ginger minced
  • 0.75 cup Chicken Stock
  • 2 tablespoons Honey
  • 2 tablespoons Rice Wine Vinegar
  • 1 tablespoon Freshly Cracked Black Pepper or more to taste

Instructions
 

  • In a spacious mixing bowl, combine the cubed chicken breast with light soy sauce, dark soy sauce, cornstarch, egg white, and 2 teaspoons of freshly cracked black pepper. Allow the chicken to marinate at room temperature for a minimum of 20 minutes.
  • Heat vegetable oil in a large skillet over high heat. Stir-fry the onion wedges and bell pepper chunks for approximately 3-4 minutes until slightly softened. Add minced garlic and ginger, stir-frying for an additional minute.
  • Push the vegetables to the side and add the marinated chicken to the skillet. Stir-fry for approximately 4-5 minutes until the chicken is cooked through and golden brown.
  • In a separate bowl, whisk together chicken stock, honey, rice wine vinegar, and 1 tablespoon of freshly cracked black pepper. Pour this sauce over the chicken and vegetables, stirring to coat. Cook for an additional 2-3 minutes until the sauce thickens.
  • Serve immediately, garnished with chopped green onions and sesame seeds, over steamed rice or noodles.

Notes

For a spicier version, increase the amount of black pepper and add chili flakes. You can also use chicken thighs for a richer flavor.
