ice pack
- ¼ cup canned black beans rinsed
- ¼ teaspoon taco seasoning
- 3 tablespoons shredded cheddar cheese
- 1 large flour tortilla
Begin by taking your large flour tortilla and laying it flat on a clean surface. On one half of the tortilla, distribute the shredded cheddar cheese evenly.
Next, sprinkle the taco seasoning over the cheese; this will add an amazing flavor boost. Then, top with the black beans.
Now, fold the tortilla in half, pressing down gently to seal the cheese and beans inside.
Heat a large non-stick pan over medium-high heat. Once it's hot, spray a little cooking spray. Place the quesadilla in the pan, cheese-side-down. Grill for about two minutes.
Carefully flip the quesadilla over using a spatula. Grill the other side for one more minute.
Once both sides are perfectly crisp, remove the quesadilla from the pan and place it on a cutting board. Cut it into thirds.
Enjoy immediately, or if you’re packing it for school, let it cool for about five minutes.
Refrigerate until you’re ready to pack it inside an insulated lunch bag, and don’t forget to include an ice pack!
