- 1 box Cake Mix
- 24 pieces Egg Roll Wrappers
- 3 cups Olive Oil for frying
- 1 large Egg lightly beaten
- 1/2 cup Sugar
- 1 tbsp Cinnamon
- 1/2 cup Butter softened
- 4 oz Cream Cheese softened
- 1 tsp Vanilla extract
- 2 tbsp Heavy Cream
- 1 1/2 to 2 cups Powdered Sugar
- Chocolate Sauce to taste Chocolate Sauce optional
- Sprinkles to taste Sprinkles optional
Start by preparing the cake mix according to the package directions in two 8x8 square pans. Allow the cake to cool to room temperature.
Once cooled, cut the cake in half and slice those halves into rectangles about one inch wide.
In a deep pan, heat about three inches of olive oil to 375 degrees Fahrenheit.
Lay one egg roll wrapper flat and place a rectangle of cake in the center. Dab your finger in the lightly beaten egg and run it along the edges of the wrapper.
Fold the bottom corner of the wrapper over the cake, fold in the right and left sides, and roll away from you to seal it tightly.
Fry the sealed egg rolls in the hot oil for two to three minutes or until golden brown.
While frying, combine sugar and cinnamon in a small bowl. Once cooked, roll the egg rolls in the cinnamon-sugar mixture.
For the frosting, beat butter and cream cheese until fluffy, then add vanilla and heavy cream. Gradually add powdered sugar until fluffy.
Drizzle the egg rolls with chocolate sauce and sprinkle with sprinkles if desired. Serve warm and enjoy!
