Ingredients
  

  • 1.5 pounds Ground Beef I use 85/15 for flavor.
  • 1 small Yellow Onion Grated or very finely diced.
  • 0.5 cup Parsley Loosely packed and finely chopped.
  • 1 teaspoon Baharat
  • 0.5 teaspoon Ground Cumin
  • 0.5 teaspoon Ground Cinnamon
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground Black Pepper

Instructions
 

  • In a large bowl, combine ground beef, onion, parsley, and spices. Mix well to combine, ensuring that all ingredients are evenly distributed. The mixture should feel cohesive and slightly sticky.
  • Using skewers or your hands, shape the kaftas into oblong shapes about 1 inch thick. Make sure they are uniform in size to ensure even cooking. This step is quite fun, and you can even involve the kids!
  • Preheat your grill to medium-high heat or around 375 degrees Fahrenheit (190 degrees Celsius). It's important to clean the grill grates thoroughly and oil them with a high smoke point oil, so your kaftas don’t stick.
  • Once preheated, place the kaftas on your grill. Cook for 6 to 8 minutes per side, or until they reach a nice medium doneness. You'll know they're ready when they develop a beautiful char and the juices run clear.
  • Remove the kaftas from the grill once cooked and serve immediately. I like to garnish them with additional chopped parsley for a pop of color and freshness.
  • If you prefer to bake, preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius). Place the shaped kaftas on a baking sheet and bake for 15 to 20 minutes, or until cooked through and browned on the outside.

  • Tip 1: You can substitute baharat with allspice if needed.
  • Tip 2: Each kafta should be about 1.7 oz for even cooking.
