Instructions
Prepare the Chicken: If using raw chicken, boil or bake until fully cooked. Allow to cool before shredding. If using rotisserie chicken, shred the meat.
Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Add diced bell peppers and chopped red onion. Sauté for about 5 minutes until tender.
Combine Ingredients: In a large bowl, mix shredded chicken, sautéed vegetables, and barbecue sauce. Stir until evenly coated. Season with salt and pepper.
Assemble the Roll-Ups: Lay a tortilla flat, spoon about 1/8 of the chicken mixture in the center, and sprinkle cheese on top.
Roll the Tortilla: Fold the sides inward and roll from the bottom up to form a tight roll. Repeat with remaining tortillas and filling.
Cook the Roll-Ups: Preheat a non-stick skillet over medium heat. Place roll-ups seam side down and cook for 2-3 minutes on each side until golden brown.
