  • 2 cups cooked chicken, shredded Using rotisserie chicken can save time.
  • 1 cup barbecue sauce Choose your favorite brand or homemade version.
  • 1 cup shredded cheese Cheddar cheese is a popular choice.
  • 1 cup bell peppers, diced Use a mix of colors for a vibrant presentation.
  • 1/2 cup red onion, finely chopped Provides a sharp taste that balances the sweetness.
  • 1 tablespoon olive oil Used for sautéing the vegetables.
  • 8 large flour tortillas Choose large tortillas to hold all the filling.
  • Salt and pepper to taste Seasoning is essential to bring out all the flavors.

Instructions
 

  • Prepare the Chicken: If using raw chicken, boil or bake until fully cooked. Allow to cool before shredding. If using rotisserie chicken, shred the meat.
  • Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Add diced bell peppers and chopped red onion. Sauté for about 5 minutes until tender.
  • Combine Ingredients: In a large bowl, mix shredded chicken, sautéed vegetables, and barbecue sauce. Stir until evenly coated. Season with salt and pepper.
  • Assemble the Roll-Ups: Lay a tortilla flat, spoon about 1/8 of the chicken mixture in the center, and sprinkle cheese on top.
  • Roll the Tortilla: Fold the sides inward and roll from the bottom up to form a tight roll. Repeat with remaining tortillas and filling.
  • Cook the Roll-Ups: Preheat a non-stick skillet over medium heat. Place roll-ups seam side down and cook for 2-3 minutes on each side until golden brown.
  • Serve: Remove from skillet, let rest for a minute, slice in half diagonally, and arrange on a platter. Drizzle extra barbecue sauce on top if desired.

Notes

These roll-ups can be prepared in advance and stored in the refrigerator for up to 24 hours. They can also be frozen before cooking.
