- 24 pieces Golden Oreos plus more for garnish
- 1 box yellow cake mix approx 15 ounces
- 2 pieces medium overripe bananas
- ¼ cup oil
- 3 pieces large eggs
- ¾ cup water
- 8 ounces cream cheese softened
- ½ cup unsalted butter softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Line your cupcake pans with liners.
Place a Golden Oreo in the bottom of each liner.
In a large bowl, mash the medium overripe bananas until smooth.
Add the yellow cake mix, oil, eggs, and water to the mashed bananas. Mix for 30 seconds on low, then 2 minutes on medium.
Scoop the batter into the prepared pans, filling each liner about three-quarters full.
Bake for 15 to 20 minutes, or until a toothpick comes out clean.
Let the cupcakes cool completely in the pans before frosting.
Make the frosting by beating the cream cheese and butter until smooth. Gradually add the powdered sugar, mixing well.
Once combined, add the vanilla extract and beat until smooth.
Frost each cupcake and top with a Golden Oreo.
Store in the refrigerator for up to two days or freeze for up to one month.
