Ingredients
  

  • 1 cup Cornmeal
  • 1 cup All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt
  • 2 Ripe Bananas
  • 1 teaspoon Vanilla Extract
  • 1 Large Egg
  • 1/4 cup Honey
  • 3/4 cup Milk
  • 1/4 cup Apple Sauce

Instructions
 

  • Preheat your oven to 400°F (200°C), and while it’s warming up, grab a muffin tin and lightly grease it or line it with muffin liners.
  • In a large mixing bowl, whisk together the first five ingredients: cornmeal, flour, baking powder, baking soda, and salt. This will ensure they are evenly distributed throughout the batter.
  • In a separate bowl, combine the remaining ingredients: bananas, vanilla, egg, honey, milk, and apple sauce. Use a fork to mash the bananas into the mixture until it’s smooth and all the wet ingredients are well combined.
  • Now, it’s time to combine the dry and wet ingredients. Slowly pour the contents of the dry bowl into the wet bowl while whisking gently. Mix until just combined, being careful not to over-mix; a few lumps are perfectly fine.
  • Fill each muffin cup about two-thirds full with the batter. If you want to make mini muffins, you’ll get more from the batch but adjust the baking time accordingly.
  • Place the muffin tin in the preheated oven and bake for approximately 15 to 20 minutes. You’ll know they’re done when they’re golden brown and a toothpick inserted in the center comes out clean.
  • Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack. This helps them set and cool evenly.
  • Now, the best part! Once they’ve cooled slightly, enjoy your Banana Corn Muffins warm or at room temperature.
