- 2 Green plantains
- ½ tbsp Curry powder
- ½ tbsp Paprika
- ½ tsp Salt
- 2 ½ tbsp Grapeseed or avocado oil
Preheat the oven to 350 °F.
Wash and peel the plantains.
Cut them into very thin slices using a mandoline or a sharp knife.
Place the slices into a medium mixing bowl.
In a small bowl or ramekin, mix together the curry powder, paprika, salt, and grapeseed oil.
Pour the spice-oil mixture onto the plantain slices.
Using your hands, gently mix it together, breaking the stuck slices apart.
Arrange the plantain slices onto a large non-stick baking sheet.
Bake for 20 minutes.
Remove from the oven and let them cool for a few minutes.

- Choose ripe plantains: It is best to use green plantains that are just about to start turning yellow. If you use very green plantains, they will be very hard to peel and will have very little sweetness.
