Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, and salt and pepper to taste. Stir well until a smooth paste forms.
Pat the chicken legs dry with paper towels.
Rub the spice mixture all over the chicken legs.
In a baking dish, arrange the seasoned chicken legs skin-side up.
In a separate pot, rinse the rice under cold water until the water runs clear.
In the same pot, add chicken broth and bring it to a boil.
Once the broth is boiling, add the rinsed rice and dried thyme. Cover and reduce heat to low, simmer for about 15-20 minutes.
While the rice cooks, place the baking dish with chicken legs in the oven. Bake for 35-40 minutes.
Once the chicken is done, let it rest for about 5 minutes.
Fluff the cooked rice with a fork and add chopped parsley and lemon juice.
Serve the baked chicken legs over the flavorful rice.
