Chicken Legs

  • 4-6 pieces Chicken Legs Ideally with skin to lock in moisture and flavor.
  • 2 tablespoons Olive Oil To coat the chicken legs before seasoning.
  • 1 teaspoon Garlic Powder For robust flavor.
  • 1 teaspoon Onion Powder To complement the garlic.
  • 1 teaspoon Paprika For color and mild smoky flavor.

Rice

  • 1 cup Long-Grain Rice Such as basmati or jasmine.
  • 2 cups Chicken Broth To cook the rice.
  • 1 teaspoon Dried Thyme For added flavor.
  • 2 tablespoons Chopped Fresh Parsley To add freshness.
  • 1 tablespoon Lemon Juice To brighten the dish.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, and salt and pepper to taste. Stir well until a smooth paste forms.
  • Pat the chicken legs dry with paper towels.
  • Rub the spice mixture all over the chicken legs.
  • In a baking dish, arrange the seasoned chicken legs skin-side up.
  • In a separate pot, rinse the rice under cold water until the water runs clear.
  • In the same pot, add chicken broth and bring it to a boil.
  • Once the broth is boiling, add the rinsed rice and dried thyme. Cover and reduce heat to low, simmer for about 15-20 minutes.
  • While the rice cooks, place the baking dish with chicken legs in the oven. Bake for 35-40 minutes.
  • Once the chicken is done, let it rest for about 5 minutes.
  • Fluff the cooked rice with a fork and add chopped parsley and lemon juice.
  • Serve the baked chicken legs over the flavorful rice.
