Instructions
Preheat the oven to 350°F (175°C).
Grease a standard muffin tin or line it with paper liners.
In a large mixing bowl, mash the ripe bananas until smooth. Add the milk, honey or maple syrup, egg, and vanilla extract. Whisk until well combined.
In another bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir to ensure even distribution.
Gradually add the dry mixture into the wet mixture. Stir until just combined.
Gently fold in the blueberries.
Evenly distribute the oatmeal mixture into the prepared muffin cups, filling each about three-quarters full.
Bake for 20-25 minutes or until the tops are golden and a toothpick inserted comes out clean.
Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Enjoy warm or store in an airtight container.
