Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a standard muffin tin or line it with paper liners.
  • In a large mixing bowl, mash the ripe bananas until smooth. Add the milk, honey or maple syrup, egg, and vanilla extract. Whisk until well combined.
  • In another bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir to ensure even distribution.
  • Gradually add the dry mixture into the wet mixture. Stir until just combined.
  • Gently fold in the blueberries.
  • Evenly distribute the oatmeal mixture into the prepared muffin cups, filling each about three-quarters full.
  • Bake for 20-25 minutes or until the tops are golden and a toothpick inserted comes out clean.
  • Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  • Enjoy warm or store in an airtight container.

Notes

These oatmeal cups can be refrigerated for up to a week or frozen for longer storage.
