Instructions
 

  • Prepare the Chicken: Cook the chicken by poaching or grilling, then shred or dice it into bite-sized pieces.
  • Prepare the Vegetables: Dice the red onion, cucumber, and cherry tomatoes. Chop the fresh cilantro.
  • Prepare the Avocados: Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash lightly and add lime juice.
  • Combine Ingredients: Add the diced chicken, prepared vegetables, and chopped cilantro to the mixing bowl with the mashed avocado. Add Greek yogurt if using.
  • Season the Salad: Sprinkle salt and pepper over the mixture and gently fold until combined.
