Instructions
 

  • 1. Wash the russet potatoes thoroughly and poke several holes in each potato with a fork.
  • 2. Preheat the air fryer to 400°F (200°C) and cook the whole potatoes for about 35-40 minutes until tender.
  • 3. Let the potatoes cool, cut in half lengthwise, and scoop out the insides, leaving a small border.
  • 4. In a mixing bowl, combine the scooped potato flesh, cheddar cheese, sour cream, milk, butter, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  • 5. Spoon the filling back into the potato skins, packing it slightly.
  • 6. Air fry the filled potato halves at 400°F (200°C) for an additional 10-12 minutes until golden brown.
  • 7. Garnish with chives or green onions and serve immediately.

Notes
