Ingredients
  

  • 2 lbs Yukon gold potatoes scrubbed and cut into 1/2” cubes
  • 1 onion finely diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Pinch cayenne optional
  • 2 teaspoons avocado oil
  • 1 Avocado oil spray for the basket

Instructions
 

  • Add all ingredients to a large bowl and mix them together.
  • Lightly spray air-fryer basket with avocado spray, or another non-repellent spray oil.
  • Preheat air fryer to 400, if necessary.
  • Add potatoes and onions to the basket, spreading into an even layer.
  • Cook for 10 minutes, then stir the potatoes. Cook for another 6 minutes, and repeat the stirring. And finally cook for another 2-5 minutes, until the potatoes are tender and crispy.
  • Serve immediately, or cool down and store for breakfast morning prep.

Notes

  • Tip: Optional to add peppers in at the 10-minute mark for extra flavor.
