Equipment

  • Air Fryer

Ingredients

  • 1 pound Chicken Breast
  • 1/2 Red Bell Pepper (sliced)
  • 1/2 Yellow Bell Pepper (sliced)
  • 1/2 Green Bell Pepper (sliced)
  • 1/2 Medium Sized Onion (sliced)
  • 2 Tablespoons Olive Oil
  • 3 Tablespoons Homemade Fajita Seasoning (or Store-Bought)
  • Flour Tortillas Flour Tortillas (For Serving)

Instructions

  • To start, cut the chicken breast into thin slices. It’s important to slice it evenly so that it cooks uniformly in the air fryer. Aim for strips that are about half an inch thick.
  • Add the sliced chicken to a medium-sized bowl along with the sliced red, yellow, and green bell peppers as well as the onion.
  • Next, drizzle in the olive oil. This not only helps to cook everything but also adds a delightful richness to your fajitas.
  • Now, sprinkle in the homemade fajita seasoning. If you’re using store-bought, make sure it’s a good quality blend for optimal flavor. Toss everything together until the chicken and vegetables are well coated.
  • Preheat your air fryer to 390 degrees Fahrenheit. This step is crucial as it ensures that the fajitas cook quickly and evenly.
  • Once preheated, carefully transfer the marinated mixture into the basket of your air fryer. Make sure not to overcrowd the basket; it’s better to cook in batches if necessary.
  • Cook for 10 minutes, shaking the basket halfway through. This allows the chicken to brown nicely and the vegetables to become tender.
  • After 10 minutes, check for doneness. The chicken should be cooked throughout and no longer pink in the middle. The vegetables should be tender but still have a bit of crunch.
  • Once cooked, remove the basket from the air fryer and let it cool for a minute. This will allow the flavors to settle.
  • Finally, serve your delicious Air Fryer Chicken Fajitas hot with warm flour tortillas and your favorite toppings such as guacamole or salsa!

Notes

  • Tip 1: Leftovers can be stored in an airtight container in the fridge for up to three days, making them perfect for meal prep.
  • Tip 2: You can freeze the cooked fajitas for up to two months. Reheat in the air fryer for the best texture.
  • Tip 3: Consider serving with a side of rice, beans, or a fresh salad to make it a complete meal.
  • Tip 4: Experiment with different fajita seasonings or add in some jalapeños for a spicy kick!
  • Tip 5: Substitute the chicken with firm tofu or additional vegetables for a vegetarian twist.
