  • 1 cup 7Up Soda Adds flavor and lightness
  • 1/2 cup Vegetable Oil For moisture

  • 1 package Instant Lemon Pudding Mix 3.4 oz package
  • 1/4 cup Fresh Lemon Juice For zesty flavor
  • 1 tablespoon Lemon Zest Enhances citrus flavor

Glaze Ingredients

  • 1 cup Powdered Sugar For sweetness in glaze
  • 2-3 tablespoons Fresh Lemon Juice For glaze consistency
  • 1 teaspoon Lemon Zest For flavor in glaze

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 10-inch bundt pan.
  • In a large mixing bowl, combine the yellow cake mix and instant lemon pudding mix. Whisk until well blended.
  • Add the vegetable oil, eggs, and 7Up to the dry mixture. Beat on medium speed for about 2 minutes until smooth.
  • Stir in the fresh lemon juice and lemon zest gently.
  • Pour the batter into the prepared bundt pan and tap gently to remove air bubbles.
  • Bake for 30-35 minutes or until a toothpick comes out clean.
  • Let the cake cool in the pan for 10-15 minutes before inverting onto a wire rack.
  • Prepare the glaze by whisking together powdered sugar, lemon juice, and lemon zest until smooth.
  • Drizzle the glaze over the cooled cake.
  • Slice and serve your 7Up Cake!

Notes

Store leftovers in an airtight container at room temperature for up to three days.
