Instructions
- Preheat your oven to 375°F (190°C).
- Wash and slice the tomatoes into quarter-inch thick rounds.
- Combine chopped basil and thyme with sliced tomatoes, drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss gently.
- Mix breadcrumbs with the remaining olive oil in a separate bowl.
- Grease a baking dish with olive oil and layer the tomatoes, breadcrumbs, and cheese (if using) until all ingredients are used, finishing with breadcrumbs on top.
- Cover with aluminum foil and bake for 25-30 minutes.
- Remove foil and bake for an additional 15-20 minutes until breadcrumbs are golden brown.
- Let the dish rest for 5-10 minutes before serving.
- Serve warm, garnished with extra basil leaves if desired.
