Instructions
- Gather all your ingredients and equipment.
- Wash and peel the carrots, then cut them into 1-inch pieces.
- Dice the onion and mince the garlic.
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes until translucent.
- Add minced garlic and cook for an additional 1-2 minutes.
- Add chopped carrots and cook for about 5 minutes.
- Sprinkle in cumin, salt, and pepper, stirring well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until carrots are tender.
- Use an immersion blender to puree the soup until smooth.
- Taste and adjust seasoning as necessary.
