- 2 lbs Boneless, Skinless Chicken Thighs
- 1 Large Yellow Onion
- 4 cloves Garlic
- 2 tablespoons Olive Oil
- 8 cups Chicken Broth
- 1 cup Heavy Cream
- ½ cup Sun-dried Tomatoes
- 1 cup Fresh Spinach
- ½ cup Grated Parmesan Cheese
- 1 teaspoon Dried Italian Herb Blend
- ½ teaspoon Sea Salt
- ¼ teaspoon Black Pepper
- Red Pepper Flakes (optional)
- Fresh Basil Leaves (optional)
- Crusty Bread (optional)
Instructions
- Brown chicken in oil, remove and set aside.
- Sauté onion and garlic in the same pot.
- Return chicken to pot, add broth, sun-dried tomatoes, and Italian herb blend. Simmer until chicken is tender.
- Remove from heat, stir in heavy cream, spinach, and Parmesan cheese until melted and smooth. Season with salt and pepper. Add red pepper flakes (optional).
- Serve hot, garnish with basil leaves (optional). Serve with crusty bread (optional).
Notes
Add vegetables for heartiness. Incorporate lemon and herbs for brightness. Make a spicy version with extra red pepper flakes. Use crushed tomatoes and fresh basil for a tomato basil twist. Add pasta for a heartier meal. Serve as a starter or with crusty bread, parmesan croutons, grilled cheese, or polenta.
